Cloudberries are among the most distinctive Nordic berries, with their golden colour and characteristic sweetness. In this recipe, a hint of cardamom adds a warm, aromatic note without overpowering the flavour of the berries.

The recipe makes approximately two 0.4 L Norgesglass jars – perfect for preserving the taste of cloudberry season to enjoy a little longer.

Ingredients

  • 1 kg cloudberries
  • 500 g sugar
  • 1/2 tsp ground cardamom
  • 0.5 dl water
  • 1 tsp lemon juice

How to make cloudberry jam

  1. Place the cloudberries and water in a saucepan and bring to the boil.
  2. Let the berries simmer for 5–8 minutes.
  3. Stir in the sugar, cardamom and lemon juice.
  4. Continue to simmer for another 5–8 minutes, until the sugar has dissolved and the jam has reached your preferred consistency.
  5. Skim off any foam if necessary.
  6. Pour the hot jam into clean, sterilised Norgesglass jars and close the lids immediately.

What to serve with cloudberry jam

Cloudberry jam is, of course, delicious with whipped cream, but you can also serve it with waffles, pancakes, yoghurt or a slice of good bread. The subtle cardamom gives the jam an extra touch of warmth that also works beautifully with baked goods and desserts.
