Fresh apple, cranberries and warming spices bring the flavours of autumn to this refreshing drink. Cinnamon, star anise and fresh herbs are left to infuse with the fruit, creating an easy alcohol-free drink with a gently spiced flavour.

Use cold water for a light and refreshing version, or combine apple juice and water for a fuller flavour. Leave the drink in the refrigerator for a few hours to allow the flavours to develop.

Infused water with apple and cranberry

Ingredients

  • Water, or a mixture of 70% unfiltered apple juice and 30% water
  • 1 dl fresh cranberries – frozen can also be used
  • 1/2 red apple
  • 2 cinnamon sticks
  • 1–2 star anise
  • 1 sprig of fresh rosemary and/or thyme

How to make autumn-infused water

  1. Rinse the cranberries, apple and herbs well.
  2. Cut the apple into thin wedges.
  3. Layer the cranberries, apple, cinnamon sticks, star anise and herbs in a clean glass bottle.
  4. Pour over cold water, or the apple juice and water mixture. Fill the bottle and screw on the cap.
  5. Put the bottle in the fridge and let the flavours steep for at least 4–6 hours, ideally overnight.

Serve it cold or warm

Cold: Serve the drink with ice cubes. Top with a little sparkling water for a fresh, fizzy version.

Warm: Strain out the fruit and gently heat the drink in a saucepan until just below boiling. Apple, cinnamon and star anise create a warming combination that's perfect for chilly autumn days.

How long does infused water keep?

Keep the drink refrigerated from the moment it is made. With the fruit left in the bottle, it is best enjoyed within the first 2–3 days. Over time, the apple pieces will soften and the herbs – particularly rosemary – can develop a stronger and slightly bitter flavour.
