
Homemade rhubarb and strawberry juice – the taste of summer in a bottle
Rhubarb and strawberry cordial is a fresh and tangy drink with natural sweetness – perfect for hot summer days and just as good into the fall. This recipe gives you a flavorful cordial that’s easy to make and works just as well as a thirst quencher with ice cubes as it does in summery cocktails.

Recipe for homemade rhubarb and strawberry juice
You’ll need:
- 1 kg rhubarb
- 1.5 liters water
- 400 grams sugar
- 1 basket strawberries
- 1 lemon
How to make the juice:
1. Chop and cook
Wash the rhubarb and cut it into smaller pieces. Bring to a boil with water and let it simmer for about 20 minutes until the rhubarb is completely soft.
2. Mash and strain
Use an immersion blender to blend the mixture as smooth as possible. Strain through a sieve and press out all the liquid from the rhubarb pulp (discard the pulp afterward).
3. Add sugar and bring to a boil
Pour the strained juice back into the pot, add sugar, and bring to a boil. Skim off the surface and let it simmer for about 15 minutes.
4. Add strawberries and lemon
Cut the strawberries into pieces and put them in the pot along with the juice and zest of a lemon. Boil for no more than 2 minutes.
5. Strain again
First strain through a regular sieve, then through a clean kitchen cloth (without fabric softener residue). Do this in batches and feel free to help along with a spoon.
Tip!
Save the purée that's left over – it tastes wonderful as jam, on porridge, in baked goods, or as a topping.
6. Pour into bottles.
Pour the juice into sterilized Norgesflasker. Let it cool on the counter before refrigerating.

Tip:
Serve the juice mixed with cold water and ice cubes, or use it as a base for refreshing mocktails and cocktails. A true taste of summer—straight from the bottle!
