Summer-fresh cheesecake in a glass

Craving a summer dessert that both tastes amazing and looks fantastic? Try cheesecake in individual jars! This is a classic with a fresh twist—perfect for garden parties, confirmations, weddings, or just an ordinary Tuesday on the patio.

The cheesecake is served in small glasses, preferably Norgesglass or dessert glasses, and can be made the day before. The fresh taste of lemon and creamy cheese filling meets a crunchy cookie base and is topped with edible flowers or fresh berries—a real wow factor in both taste and appearance.

Recipe for individual cheesecake in a glass

You will need:

Cookie base:

  • 150 g Digestive biscuits
  • 75 g butter

Cheese filling:

  • 200 g plain cream cheese
  • 2 dl full-fat sour cream
  • 1 dl powdered sugar
  • Grated zest and juice of 1 lemon
  • 2 dl heavy cream

Decoration:

  • Edible flowers or fresh berries (e.g. strawberries, blueberries, or raspberries)

How to do it:

1. Crush the biscuits and mix with melted butter. Distribute the biscuit mixture in the bottom of each glass and press it down lightly.

2. Whip cream cheese, sour cream, powdered sugar, lemon juice, and zest until smooth.

3. Whip the heavy cream until stiff in a separate bowl and gently fold it into the cheese mixture.

4. Spread the cheesecake filling over the cookie base in the glasses. Chill for at least 2 hours – preferably overnight.

5. Just before serving: garnish with fresh berries and edible flowers.
