Dark, ripe elderberries make a delicious homemade cordial with a fresh touch of lemon. If you have access to elderberries in autumn, this is a simple way to make the most of the berries and fill a Norgesflaske bottle with something homemade.

Enjoy the cordial cold, or serve it warm on chilly autumn days.

Elderberry cordial recipe

Ingredients

Makes approx. 750 ml of cordial

Important: Elderberries should always be cooked before use.

  • 500 g ripe elderberries
  • 600 ml water
  • 250 g sugar
  • 1 tbsp lemon juice

How to make elderberry cordial

  1. Rinse the elderberries and remove as much of the stems as possible.
  2. Place the berries and water in a saucepan and bring to the boil.
  3. Simmer for about 20 minutes.
  4. Strain the juice through a muslin cloth or fine-mesh sieve.
  5. Pour the juice back into the saucepan and stir in the sugar and lemon juice.
  6. Heat until the sugar has completely dissolved.
  7. Pour the hot cordial into a clean, sterilised Norgesflaske bottle (750 ml) and seal securely.

How to serve

Dilute approximately 1 part cordial with 4 parts cold water, adjusting to taste.

Elderberry cordial pairs well with a cheese board, apple cake and other autumn baking, waffles or pancakes. Serve it cold with ice and a slice of lemon.

On cooler days, you can also gently warm the cordial and enjoy it as a comforting drink after a walk outdoors.

Make the most of autumn berries

Making cordial is a lovely way to use seasonal berries. With just a few ingredients, ripe elderberries can be turned into bottles of homemade cordial to enjoy later.

Store the cordial in a cool, dark place. Once opened, keep it refrigerated and enjoy within a couple of weeks.
