When tomatoes are at their best, they can be turned into a simple tomato sauce, filled into Norgesglass jars and preserved for later. With just a few ingredients, you get a versatile sauce that can be used as the starting point for many different dishes.

Here is chef Nils Flatmark's recipe, adapted to a 1 L Norgesglass jar. Further down, you'll also find quantities for 0.4 L, 0.7 L and 2 L Norgesglass jars.

For one 1 L Norgesglass jar

  • 1 kg tomatoes
  • 100 ml Norwegian rapeseed oil
  • 3 tbsp brown sugar
  • 4 tsp salt
  • 3 garlic cloves

How to make homemade tomato sauce

  1. Roughly chop the tomatoes.
  2. Place them in a large pot with the rapeseed oil, brown sugar, salt and garlic. Cook for approximately 30 minutes.
  3. Blend until smooth, then strain the sauce.
  4. Pour the hot tomato sauce into a clean, prepared Norgesglass jar and preserve it according to the method in our step-by-step guide.

How to use the tomato sauce

Use the tomato sauce as a base for pasta sauces, soups and stews. Add herbs, spices or other ingredients depending on the dish you are making.

Important tips before eating

Store in a cool place

Store the finished tomato sauce in a cool place. Always check that the jar is properly sealed and that the contents appear normal before use.

Boil before serving

Before serving or using the tomato sauce in another dish, the contents must be boiled for at least 10 minutes. This is an additional food safety measure that helps reduce the risk of botulism by destroying any botulinum toxin that may be present.

Check the jar

Do not taste food from jars that are leaking, have a poor seal, foam when opened or show other signs that the food may be spoiled. If in doubt, discard the contents.
